Satria Gentur Pinandita, Head of the Communication Division of the Association of Indonesian Monosodium Glutamate and Glutamate Acid Factories (P2MI), revealed that Monosodium Glutamate (MSG) or micin contains sodium which is certainly not harmful to health.
"The same sodium as found in table salt or table salt, while glutamic acid is an amino acid that is naturally found in meat, fish/seafood, vegetables such as tomatoes, garlic, potatoes and other vegetables, as well as in konbu type seaweed," he said, Tuesday (23/5/2023).
Not only that, continued Satria, more glutamic acid is found in high protein foods which are fermented in a relatively long time such as cheese, soy sauce, fish sauce, spicy fish and the like.
Food Technology Lecturer at the Bogor Agricultural Institute, Hanifah Nuryani Lioe added, the use of micin does not cause negative effects, so it has a safety reference value called ADI (acceptable daily intake) "not specific"
JECFA the world committee that studies the risks of using food additives such as MSG under the Food and Drug Administration (FDA) and the World Health Organization (WHO) makes MSG also safe when added to cooking
"The Na content in MSG is less than table salt so the risk of hypertension due to excess sodium consumption is higher in table salt at the same dose," he said.
Hanifah emphasized that MSG contains 13.6 percent Na or 12 percent Na in the form of monohydrate MSG, while table salt contains 39 percent Na.
"The use of MSG in cooking can even reduce the use of normal table salt," he said.
